Dwell Time
Most individuals abide by the rules of spraying a surface and wiping up the liquid immediately, presenting a clean-looking surface. However, this is improper technique. All disinfectant products have what is called a "Dwell Time". Dwell, or contact time is the appropriate amount of time a disinfectant needs to remain wet on a surface in order to effectively eliminate bacteria, germs, and viruses. Spraying and wiping immediately has no effect and will not eliminate the bacteria or viruses you are seeking to destroy.

Deodorization
Odor control is of the utmost importance when working with large groups of people. It can directly impact a customer's perception on the quality of a restaurant. Large groups of people, especially a weekend rush, will bring about a number of odors that may change the complexion of an establishment.
Chlorine Dioxide products are a great odor removal source because its small molecular size (approximately 124 pm) and natural ability to fill any space offers an unmatched distribution ability. Chlorine dioxide gas is a selective oxidizer allowing it to easily penetrate surfaces, cracks and crevices, and can even penetrate through organic matter like bio-films.

Importance of Air Quality
Humans typically breathe in 2,000 gallons of air each day (17,000 breaths a day or more than 6 million breaths per year).
Germs spread quickly via air and can remain in the air for hours. A single breath releases 50-500 droplets. A single cough releases about 3,000 droplets, which can travel up to 50 miles per hour. Many of these droplets stay in the air and travel across a room within a few seconds. A single sneeze releases about 30,000 droplets, traveling up to 200 miles per hour. Most droplets are small and travel easily across a room. In a crowded restaurant, imagine all of the droplets that are traveling via air- possibly moving illnesses from one end of the restaurant to the next.
